Diabetes365 day 4 Thursday, October 11, 2007

Whenever I make an apple pie at night the children always want a slice for breakfast. And it's got fruit and other good things, so why not let them.

Today is day 4 of my diabetes365 project. And you can see the children's breakfast on the right and my oatmeal on the left.

Diabetes365 day 3 Oct. 10th 2007 - Oatmeal and Apple Pie

Because of diabetes I've changed how I approach baking. I make the pie crust with a mixture of white and whole wheat white flour. It still tastes yummy and the addition of the whole wheat white lowers the glycemic index (a little) so the carbs don't hit my system as quickly. Recently I started making a pie with only a single pie crust which also lowers the total carbohydrate count for a slice of pie.

If you're interested, I made the pie with local Honeycrisp apples. These are wonderful for baking with and make really great pies.

Of course this morning all this work was a moot point, as I ended up having some oatmeal for breakfast! The things we do to control our blood sugars.

Bernard, sweetheart, I am really starting to see why you get such highs and lows with your blood sugar.

Apple pie and oatmeal for breakfast> The CGMS studies show even normal people having surprisingly high blood sugars when they eat a bowl of carbs at breakfast. Us folks who have to play, "Pretend I'm a Pancreas!" aren't going to do much better with breakfasts that have three times as much carb as the bowl of cereal.

Bernard, here is a hug from me - making an apple pie for your kids and not even a nipple passing your lips. That is love. That is what it is all about, wanting something for them more than yourself!

Honeycrisp are my new FAVORITE apples. You can't go wrong.

We have often had pie for breakfast. It's better than cereal! Just as long it is a fruit pie, not chocolate cream...

Bernard, for those that didn't read the wonderful link, honeycrisp is indeed the official Minnesota State Fruit. It was developed right here at the horticulture dept and the U of M.
Funny thing, though, is that they remain the most expensive apple in the grocery store. You'd think I'd get a geographical discount or something. (Like test strips, maybe it's an added cost for research and development.)
I like it's delicate flavor, but, my alltime favorite is still the Braeburn.

Please post the apple pie recipe! I'm always looking for ways to make desserts a little more diabetic friendly and the whole wheat flour crust sounds yummy. I'm thinking I could use Splenda.
